{Let's Get Crockin'} Chicken + Sun-Dried Tomatoes


This is a perfect staple recipe that is so versatile. 
It can be tailored to pretty much any dish you'd like! 
Pair it with a salad, over rice, or like I have below... two different ways. 
Make ahead on a Sunday, and you've got lunch for the entire week. 
Yes, please. 

Chicken + Sun-Dried Tomatoes


Ingredients
3 lbs boneless, skinless chicken breasts 
3/4 cup sun-dried tomatoes, sliced
2 garlic cloves, diced
1 cup, low sodium/fat free chicken broth
1/2 cup dry white wine
1/2 cup water
1 tbsp. olive oil
1/2 tsp parsley 
1 tsp. salt + pepper 

Directions
Sear chicken 2 minutes on each side in olive oil 
Combine all ingredients in crock pot + cook for 4 hours on low

Option 1:

I paired the chicken with my favorite, all-natural ravioli and 1/4 cup of my favorite pasta sauce
Easy + Healthy! 



Option 2:

This is my absolute favorite couscous salad.  
It's perfect cold, and great for work lunches. 



It's just chicken -- duh, jess. 
But with a little planning + creativity, you've got healthy meals all week long.
