Another healthy slow cooker meal is making its debut today.
This is probably the husband's favorite so far.
It's got a subtle kick, and fills you up for hours since it's packed with protein!
Ingredients
Serves 8-10
2 smoked chorizo sausages, cubed
2 cans white beans, drained + rinsed
1 lb boneless, skinless chicken breasts
1 cup barley (I used pearl barley - but hulled or pot barley work too)
1, 28 oz. can diced tomatoes, including juice
2 small onions, finely chopped
2 large cloves garlic, minced
1 tsp dried oregano
1 tsp black pepper
2 tsp ground cumin
2 cups chicken stock, low sodium
1 red bell pepper, diced
2 tsp chili powder, dissolved in 1 tbsp lime juice
1 jalapeno pepper, minced {optional}
avocado, red onion, cilantro, and lime for garnish
Directions
Add all ingredients except:
chili powder + lime juice mixture, red peppers, and jalapeno pepper to slow cooker
Cover and cook on Low for 6 hours or High for 3 hours
Stir in red pepper, chili powder mixture + jalapeno {optional} and cook an additional
30 min - 1 hr on High until peppers are tender
Garnish + serve with your favorite beverage!
Skinny margarita, anyone?
Enjoy!

Once I am home and able to cook, I'm going to make a few of these crockpot meals ;-)

ReplyDeleteI actually think this is one I've pinned to try...but hubby decided to "help" me out by going to the grocery store and getting what wasn't on the list so now I have to figure out meals from all of it :/
