{Let's Get Crockin'} Chicken Chili Casserole

Another healthy slow cooker meal is making its debut today. 
This is probably the husband's favorite so far. 
It's got a subtle kick, and fills you up for hours since it's packed with protein! 


Ingredients
Serves 8-10 
2 smoked chorizo sausages, cubed
2 cans white beans, drained + rinsed
1 lb boneless, skinless chicken breasts
1 cup barley (I used pearl barley - but hulled or pot barley work too)
1, 28 oz. can diced tomatoes, including juice
2 small onions, finely chopped
2 large cloves garlic, minced
1 tsp dried oregano
1 tsp black pepper
2 tsp ground cumin 
2 cups chicken stock, low sodium
1 red bell pepper, diced
2 tsp chili powder, dissolved in 1 tbsp lime juice
1 jalapeno pepper, minced {optional}
avocado, red onion, cilantro, and lime for garnish 


Directions
Add all ingredients except:
chili powder + lime juice mixture, red peppers, and jalapeno pepper to slow cooker
Cover and cook on Low for 6 hours or High for 3 hours
Stir in red pepper, chili powder mixture + jalapeno {optional} and cook an additional 
30 min - 1 hr on High until peppers are tender

Garnish + serve with your favorite beverage! 
Skinny margarita, anyone?

  2. I actually think this is one I've pinned to try...but hubby decided to "help" me out by going to the grocery store and getting what wasn't on the list so now I have to figure out meals from all of it :/
