{The Assignment} Chocolate Chip Pumpkin Cookies

Hello Everyone!  First of all, Congrats to sweet Jess and her guy!!  I wish you nothing but love and happiness.  I am thrilled and honored to be guest posting while Jess is off getting hitched and on her honeymoon.

Fall is my absolute favorite season.  I love everything about fall.  Seriously, I can't think of one thing I don't like.  I love windows open at night, hoodies, fall flavored coffee, football, pumpkin patches, and fire pits.  I wish I could freeze fall and live in it forever.  Okay, before my love affair with fall becomes embarrassing.... Let's talk food.  My girl and I love to bake together. So, I have to share with you all lovely's today our absolute favorite fall cookie.  Try it...you won't be disappointed! 

These Chocolate Chip Pumpkin Cookies are the perfect symbol of fall.  These cookies are a staple in our house.  They are the best combination of all of the best things about fall.  And they make your house smell amazing.  Most importantly, they are delicious!  Enjoy!

Ingredients:
1/2 cup butter/margarine
1 egg
1 tsp. vanilla
1 tsp. baking powder
1/2 tsp salt
1 tsp cinnamon
1 cup chocolate chips (or whole bag)
1 1/2 cup sugar
1 cup cooked canned pumpkin (or whole can)
2 1/2 cups all purpose flour
1 tsp. baking soda
1 tsp. nutmeg
1/2 cup diced roasted almonds (if you want)
1 cup raisins (if you want)

Directions:


Cream butter and sugar together until light and fluffy.  Beat in egg, pumpkin and vanilla.  Mix flour, baking soda, salt, nutmeg, and cinnamon.  Add to creamed mixture, mix well.  Add chocolate chips.  Add almonds and raisins (if you want)

Drop onto well greased cookie sheets.  Bake at 350 for 15 minutes until lightly browned.  Cool on racks.  Makes about 3 dozen cookies.  Can be doubled and frozen.
