{gluten-free} egg mc 'muffins'

We have been trying to eat a little better in casa de Jeremiah & Jessica lately.
Carbs and sugars are the enemy.
Even though we love them so.

Breakfast is a tough one.
I love Egg McMuffins.  It's the whole muffin thing that I don't love so much.

Solution: lose the muffin, but still make it tasty.


What You Need:

gluten-free canadian bacon (6 slices)
eggs (6)
cooking spray
salt + pepper to taste

How To Make It:

pre-heat oven to 375
spray muffin tins with cooking spray
make a small 1/4 slice in the canadian bacon
place 1 slice of bacon at the bottom of each muffin cup
crack eggs into muffin cups
(it may overflow slightly, but that's okay)
pierce yolk with fork; add salt + pepper to taste

bake uncovered for about 15 minutes
(or until eggs are cooked to your preference)

Serving Size (1 muffin)
140 calories
12g protein!





These are perfect to make-ahead and heat up in the microwave for 30 seconds in the morning.
Quick, easy, and healthy!
